Friday Night Dinner - Can it possibly be healthy?
I have been really lousy with the menus this week. I promise I’ll post some photos I took during the week and to go back to posting full menus as soon as possible.
Dinner tonight will be indulgent and healthy! Remember it is caloric, so moderation is key, but it will be nutritious, I promise!

Wednesday Menu - 02/15/2012
Soo… we stayed in yesterday! And my husband helped cook a very nice dinner of steak and mushroom sauce over fettuccine (what could be more romantic?). We opened a 2002 bottle of wine I brought from South Africa and had our cozy Valentines Day. Photos of the dinner will be posted tonight.

I’m back with the normal, healthy menu for weekdays! I’ve indulged too much, so I need to go back to a routine (that way I can indulge a little on weekends and special occasions like tomorrow!)
As always, the menu is very affordable: less than $100/week for 2 people, including 3 meals and 2 snacks.

After all these days without a connection, I’m back in the U.S. again, only to leave again… to Uganda, this Friday, for two weeks of work.
I’ll definitely report on everything I eat while trying to keep it healthy and affordable. I’ve abused way too much while I was in Brazil and it is time to get back on track.
