Friday Night Dinner - Can it possibly be healthy?
I have been really lousy with the menus this week. I promise I’ll post some photos I took during the week and to go back to posting full menus as soon as possible.  Dinner tonight will be indulgent and healthy! Remember it is caloric, so moderation is key, but it will be nutritious, I promise! I read many recipes of lasagna (who doesn’t love lasagna?) and came up with this one....

Friday Menu - 02/17/2012
This weekend we’re having friends over for pizza. You have seen a lot of my whole wheat pizzas in the blog, and this won’t be different. I’ll add a salad because you know what happens when you have friends and booze and pizza all in the same place: overeating, of course! But I’ll try to keep it as light as possible… hummm on a second thought, I think I can do cheese...

Thursday Menu - 02/16/2012
Good morning everyone! Today’s menu was done in a hurry. We had to leave the house for a meeting earlier than usual, so quick meals was the order, without losing sight of being healthy, though! Actually, I’d be very happy if I ate like this EVERY DAY. Look at those numbers in the nutritional info! High-protein to keep you up, low-fat (and most of it coming from olive oil and...

Wednesday Menu - 02/15/2012
Soo… we stayed in yesterday! And my husband helped cook a very nice dinner of steak and mushroom sauce over fettuccine (what could be more romantic?). We opened a 2002 bottle of wine I brought from South Africa and had our cozy  Valentines Day. Photos of the dinner will be posted tonight.  Today, the menu is light to compensate yesterday’s. I hope you enjoy. Breakfast - Banana/Almond...

Tuesday Menu - 02/14/2012
It’s Valentines Day! And, of course, in the good tradition, I’m taking my husband to dinner. Or he’s taking me to dinner. We never know.  Since I don’t know where I’m going, I’ll talk about that tomorrow when I have photos of our night out. For now, here’s the breakfast and lunch menus for today. Enjoy! Breakfast - Swiss Cheese Omelet = $3.50 for 2...

Monday Menu - 02/13/2012
I’m back with the normal, healthy menu for weekdays! I’ve indulged too much, so I need to go back to a routine (that way I can indulge a little on weekends and special occasions like tomorrow!) As always, the menu is very affordable: less than $100/week for 2 people, including 3 meals and 2 snacks. Remember: nutritional info is individual and men need a little more than women...

Tentative Luwombo - It worked!
During my trip to Uganda in January, I fell in love with typical Ugandan food. Usually when a foreigner travels on business to Africa, there’s this need of eating foods that remind you of home, and people are generally afraid of trying new things (I’m speaking for my American friends, mostly).  Not me! I made sure I ate as much of the local fare as possible, and one of the things I...

Healthy Office/School Lunch - Shrimp Salad
Here’s a very simple and healthy office/school lunch that is super easy to do in the morning, and very tasty. What’s best about it? Mayo made with olive oil and loads of veggies and protein to keep you full for a while. Light Shrimp Salad (individual portion) 15-20 large shrimp, cooked, peeled and de-veined (cocktail shrimp you buy anywhere, about 4 oz) 1 tblsp of light mayo...

Healthy Winter Dinner - Beef + Butternut Squash...
Very tasty recipe I made up yesterday for dinner. If you follow the South Beach lifestyle, it’s Phase 2 because of the butternut squash and carrots, but you could make it Phase 1 by replacing the carrots with mushrooms, and putting a little more onion and bell peppers, and skipping the butternut squash or even replacing it with eggplant. Beef and butternut squash stew (for 2 people with...

Back to healthy eating at home - Kale and Sausage
For the past 5 weeks I’ve been really spoiled and eating food that is not unhealthy, but far from the routine I’m used to, so I decided to go back to cooking simple dinners until I have to go away again. This weekend we’re visiting friends in State College (fondue is only one of the things on the list!), and I know it’ll be impossible to keep a super healthy diet, so to...

Back from good to good again - Squid Risotto
I’m not done being out of the house yet, but I got back last Saturday from Uganda, where I had this great experience not only for work, but especially for personal growth. Africa continues to amaze me. They are so rich in some resources and home to the most amazing wildlife, and yet they suffer like no other continent with poverty, corruption, disease.  I could write forever about Africa,...

Back!
After all these days without a connection, I’m back in the U.S. again, only to leave again… to Uganda, this Friday, for two weeks of work. I’ll definitely report on everything I eat while trying to keep it healthy and affordable. I’ve abused way too much while I was in Brazil and it is time to get back on track. Today I had no food in the refrigerator, so we ate cereal...
